Kartoffel Suppe (Potato soup)
Satisfying and Creamy. A German Potato soup with chunks of ham and cheese.
ingredients
- 6 medium potatoes,peeled, small cubes
- 2 cups water
- 1/4 tsp Salt
- 1/4 cup finely chopped onions
- 4 Tbsp butter
- 4 Tbsp Flour
- 1 cup milk
- 3 cups water(reserved potato water)
- 1 cup shredded cheddar cheese
- 1 cup cubed cooked ham
- 2 strips fried bacon(crumbled)
- 1 Tbsp chicken boullion
- Salt and Pepper to taste
- Parsley

1. Bring water and 1/4 tsp salt to a boil. Add potatoes and cook until tender.

2.Drain potatoes, reserving cooking liquid. (add water to measure 3 cups).

3. Melt butter in medium saucepan over medium heat.

4. Sautè chopped onions in hot butter until tender.

5. Add flour to butter and onion mixture; stir until smooth. Continue to cook and stir for one minute.

6. Gradually add coking liquid and milk stirring well until thickened.

7. Add boullion, cheese, ham, bacon and potatoes. Season with pepper and salt to taste.

8. Simmer potato soup over low heat, or place into crock pot to let flavors blend.

9. Garnish with parsley and serve.
