TGI Fridays Jack Daniels Grill Glaze

Makes 1 cup of glaze

ingredients

  • 1 Head of garlic
  • 1T. Olive oil
  • 2/3c. Water
  • 1c. Pineapple juice
  • 1/4c. Teriyaki sauce
  • 1T. Soy sauce
  • 1 1/3c. Dark brown sugar
  • 3T. Lemon juice
  • 3T. Minced white onion
  • 1T. Jack Daniels Whiskey
  • 1T. Crushed Pineapple
  • 1/4t. Cayenne pepper

    Cut about 1/2" off the top of the garlic. Cut roots so garlic will sit flat. Remove papery skin from garlic, leaving enough so it will stay together. Put garlic into a small casserole dish and drizzle with olive oil. Bake at 325° for 1 hour. Remove garlic and let cool until you can handle it.

    Combine water, pineapple juice, teriyaki sauce, soy sauce, and brown sugar in a LARGE sauce pan over med heat. Stir occasionally until mixture boils then reduce heat to simmer.

    Squeeze the sides of garlic until all is squeezed out. Measure out 2 teaspoons and whisk it into hot mixture. Discard the rest. Add remaining ingredients to pan and stir.

    Let mixture simmer for 40-50 minutes or until sauce has reduced by about 1/2 and it thick and syrupy. **Watch for over boil!*

This recipe can be doubled and tripled. It does not go far and is very good.
