Whole Wheat Bread
- 1/4 cup warm water
- 1 package active dry yeast
- 1 large egg, beaten
- 1/4 cup (1/2 stick) butter, melted
- 2 1/2 cups lukewarm water
- 1 1/2 teaspoons salt
- 1/4 to 1/2 cup sugar, or honey
- 4 cups whole wheat flour
- 4 cups all-purpose flour
Combine 1/4 cup water and yeast in a large bowl, and let stand until the yeast is dissolved, about 5 minutes.
Add, and mix well: egg, butter, 2 1/2 cups water, salt, and honey.
Knead for about 10 minutes. Allow dough to rise in a large oiled bowl until doubled, about 1 hour, and once in 3 greased 9 x 5-inch loaf pans until doubled, about 45 minutes.
Preheat the oven to 350 degrees.
Bake about 45 minutes. Bake until the crust is golden brown and the bottom sounds hollow when tapped. Brush tops with butter for a soft crust. Remove the loaves to a rack to cool completely.
