Prime Rib
ingredients
- 7-12 lbs. roast
- 1 tsp salt
- 3 tbsp crushed pepper
- 2 tbsp each olive oil and Dijon mustard
- 2 clove garlic minced
- 2 cups beef broth
- 1 cup red wine
- 2-3 T. flour

Heat oven to 425. Trim fat on top of roast to 1/4 inch.

Put roast in pan. Combine salt, pepper, oil, mustard and garlic and spread over meat.

Reduce oven to 350. Roast for 2 hours or until therm. Reads 140.

Remove meat from oven and let stand 15 minutes.

Remove all but 2 tbsp fat and save. Stir in flour and broth together and cook 1 minute. Add pan juices and red wine. Cook, stirring until thickened. Be sure to boil for one minute.
