Blue Cheese - Bacon Coleslaw
This is a fantastic summer salad that’s perfect for a barbecue. It’s a real step up from traditional coleslaw.
ingredients
- 8 bacon slices, chopped
- 1/2 c. Hellman’s mayonnaise
- 1/2 c. buttermilk
- 3 T. apple cider vinegar
- 1 T. honey
- salt and pepper
- 1 small head cabbage, shredded
- 1 c. crumbled blue cheese
directions

1. Cook bacon in the microwave until crisp. Set aside.

2. Whisk mayonnaise, buttermilk, vinegar, honey in a large bowl. Add coleslaw and cheese. Gently mix and season to taste with salt and pepper. At this point, salad can be chilled for up to 2 hours.

3. Just before serving, gently fold bacon into salad.
