Grilled Steak and Portabello Mushroom Fajitas
Fun to prepare, fun to eat.
ingredients
Ingredients- 1 1/2 lb. skirt steak
- 3 big portabello mushrooms
- 2 med onions
- Flour tortillas
- Salsa Fresca
- Sour Cream
- Guacamole
- 1 lime;juice of
- 1/4 c. olive oil
- 1 tsp. cumin
- 1 tsp. chili powder
- 1 tsp. dried oregano
- 3 cloves garlic minced
- 1/4 c. olive oil
- 1/4 c. vegetable oil
- 1/2 c. soy sauce
- 1/2 c. minced onion
- 1 tsp. pepper
- 1/4 c. vinegar
- 1/4 c. lemon juice
- 3 cloves garlic minced
- 1/4 c. cilantro chopped
- 2 T. worchestershire sauce
- 1 tsp. salt
directions
For Mushrooms:
Mix all marinade ingredients together in a bowl. Pour into Ziploc bag. Cut off stems of mushrooms and throw into bag. Marinate for 1 hour. Grill for 4-5 minutes each side.
For Steak:
Combine all ingredients in bowl and pour into Ziploc bag. Throw in skirt steak. Cut onions in the round and add to bag. Marinate for 2 hours. Grill steak on high heat 3-4 minutes per side. Slice Steak. Grill onions for 4-5 minutes.
To complete the meal:
Combine steak and portabello mushrooms on flour tortillas and dress with sour cream, salsa and guacamole.
