Thai Soup
This makes a great soup and is also great over rice or noodles. You can add anything to this soup to make it even better like chicken, shrimp, bell pepper, or rice noodles.
ingredients
- 1 can coconut milk
- 1 can diced tomatoes
- 1 bunch cilantro
- 1 yellow onion chopped
- grated fresh ginger to taste
- cayanne pepper to taste
- 1 sprig lemongrass
directions
Saute onion in a pot, add all the ingredients, then let simmer. Take out lemongrass and serve with leftover cilantro for garnish.
