Cuban Sandwich
Looking for a new sandwich to make – something that is tasty yet oh-so-easy? Try my version of a Cuban sandwich. My “secret” is in the zesty rub used on the pork tenderloin. It gives the pork a nice flavor, without overpowering the sandwich.
ingredients
- 1.5 Pounds Pork Tenderloin
- 1 Rind of 1 Orange, Lemon, and Lime
- 5 Sandwich Thin Pickles
- 1/4 Cup Grey Poupon Mustard
- 1 tsp Dried Oregano
- 1 tsp Kosher Salt
- 1/2 tsp Cracked Black Pepper
- 1 Baguette
- 1/2 lb Sliced Ham
- 6 Slices Swiss Cheese

1. Preheat the oven to 350 degrees.

2. In a small bowl combine the zest of 1 lemon, lime, and orange with the juice of the orange, the dried oregano, salt and pepper.

3. Rub the pork tenderloin with the concoction before placing it in a baking dish. Bake for 30-40 minutes.

**You want the pork to be firm in texture but have a little bounce to it. The juices should run clear.

4. To assemble the sandwich, cut the baguette lengthwise, smear with mustard, shingle with sliced pork tenderloin, ham, pickles, and finished with swiss cheese.

5. A true Cuban sandwich is finished by being grill. If you are interested, just slice the sandwich and press under your George Foreman Grill. I prefer mine without the grill – you can’t go wrong either way.
