Green Eggs and Ham (Savino Sono)

This is Green Eggs and Ham done with Italian influence. a sunny-side-up egg It’s served on toasted Italian bread with a bold and vividly green parsley pesto. “Savino,” is the Italian equivalent for the name “Sam,” and “Sono,” is Italian for “I Am.”

ingredients

  • 2 cups (packed) fresh Italian parsley leaves (from 2 bunches)
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons pine nuts, or walnuts toasted
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons water
  • 2 tablespoons Parmesan Cheese
  • 1 small garlic clove, peeled
  • Salt and pepper to taste
  • 4 Large Eggs
  • 4 Slices Prosciutto***
  • Toasted Italian Bread

    For the Pesto: Combine all the ingredients, except for the olive oil, in a food processor and blend. Slowly drizzle the olive oil while blending.

    For the Sunny-Side-Up Eggs:

    In a nonstick pan over medium heat, add just enough oil to coat the bottom of the pan. Crack the egg and cook until the whites are opaque and not runny.

    To serve: Toast the bread and place the Prosciutto on top. Once the egg is cooked, place it on top of the bread, and spoon the pesto over the egg.
