Crappie's Shrimp Salad On Glass
An exotic blend of shrimp, lime juice, mint, cilantro, tomato and cucumber to really tingle your tongue. You can surely impress your mother in law with this one! So refreshing, especially on a hot summer day!
ingredients
- 2 pounds of medium shrimp, cooked and ready to go
- 1/3 cup lime juice
- 1/3 cup lemon juice
- 1/3 cup orange juice
- 2 teaspoons honey
- 1 teaspoons of fresh mint, chopped
- 3 Roma tomatoes, diced small
- 1 tablespoon of cilantro, chopped
- 2 avocados
- 1 cucumber, peeled and seeded
- 1 red onion, diced small
- DRESSING:
- 1/4 cup of white tequila
- 1/2 teaspoon coarse salt
- 2 tablespoons lime juice
- 1/4 teaspoon cracked pepper
- 2 tablespoons minced shallots
- 1/4 cup heavy cream
- 1 teaspoon minced garlic
- 1 stick butter cut up and left at room temperature
- 1 tablespoon fresh cilantro, chopped
- 1 tablespoon honey

Place shrimp in gallon sized zip lock baggie

In bowl add the lemon, lime and orange juice

Add the honey and fresh mint

Add marinade to shrimp. Close tightly and marinate 4-6 hours

In bowl, put tomatoes, cilantro, cucumber and red onions. Let sit at room temperature 20 minutes

Do not peel the avocado until you remove the shrimp from the marinade, then peel, pit and dice

Remove shrimp from marinade with slotted spoon and add to other ingredients. Now you can add the peeled, pitted and diced avocado

Put mix in chilled martini glasses and top with “Tequila Lime Dressing”

Garnish with mint or cilantro
