Mix flour, shortening, egg and salt. Cut together like a pie crust. Add water until dough is the slightest bit sticky and very smooth.

Cut potatoes into chunks and boil till soft. Mash them with the grated cheese, then whip until smooth.

Pull of handfuls of dough and roll out in a hot dog shape with hands. Cut roll into 5 pieces. Flatten each piece between fingers and make into a circle shape. Put a half teaspoon of potato filling in the center of the dough circle.

Fold the circle to make a crescent shape and pinch edges together. Drop into boiling water and take out when pierogie floats to the top. Drain on a paper towel. Fry each pierogie in butter utnil browned on both sides
