Minestrone Soup
Extremely tasty and healthy. Definitely hits the spot on a cold day !
ingredients
Ingredients- 1 cup lentil beans
- 3 medium carrots
- 2 medium zucchini, sliced and quartered
- 1 cup diced onion
- 4 cloves of garlic, minced
- 2 tablespoons Olive Oil
- 1 can Cannellini beans, drained and rinsed
- 3 chicken bouillon cubes
- 2 cans (14 oz) diced tomatoes, Italian Style
- 6 ounces tomato paste
- 2 teaspoons basil
- 2 teaspoons oregano
- 2 teaspoons salt
- 1/2 teaspoon black pepper
- 1/2 cups small shell pasta
- 6 ounces sliced black olives, optional

Preparation

Cook lentils according to package and set aside for later..

Heat olive oil in a large cooking pot, over medium, and sauté the carrots, onion, and garlic until the onions are clear.

Add 6 cups of water and the chicken cubes to the pot; boil for 3 minutes.

Turn heat to low and add the diced tomatoes, tomato paste, olives(optional) and seasonings.

Simmer on low for 20 minutes and now prepare the small shell pasta.

Add the pasta and lentils stir for 5 minutes and serve with bead sticks.
