Arroz con Gandules
Arroz con gándules is considered the main dish of Puerto Rico and it has garnered great reviews in The Taste of Chicago, an annual food festival. The traditional “rice and beans” combined with pork and other spices create a new savory dish!
ingredients
- Pam
- 1 lb boneless pork-chops, cubed
- 1 package of Sazón with coriander and annatto (Goya)
- 1 medium onion, chopped
- 2 tbsp of fresh cilantro
- 3 cloves garlic, crushed
- 2 tsp salt
- 1/4 tsp ground black pepper
- 1/2 can tomato sauce
- 1 can pigeon peas, drained
- 1/2 can black olives, pitted and halved
- 2 cups of uncooked rice

1. Spray Pam in a large saucepan over medium-high heat. Add pork and brown.

2. To the browned pork add the onion, cilantro, garlic, sazón, salt and pepper. Cook until onions become translucent, then add the tomato sauce, pigeon peas and olives. Mix well. Reduce heat to low and let simmer for 10 minutes.

3. Add uncooked rice and 3 cups of water to pork mixture; stir well. Raise temperature to high, cover saucepan and bring all to a boil. Stir again, reduce heat to low and cover; let cook on low about 10 minutes. Remove cover, stir again, replace cover and cook another 10 minutes; stir again. Remove from heat and allow to stand for 15 minutes.
