Turkey Meat Loaf
ingredients
- 2 t oil
- 1 onion, diced
- 2 c sliced mushrooms
- 2 green onions, chopped
- 1 carrot, shredded
- 1 clove garlic, minced
- 1 1/2 t basil
- 1 1/2 lb ground turkey breast
- 1 egg
- 1/2 c breadcrumbs
- 2 T Parmesan
- 1/2 t salt
- 1/2 t ground pepper
- dash hot sauce
- 2 T ketchup

Preheat oven to 350 degrees; heat oil in medium skillet over medium heat. Saute onion, mushroom, green onion, carrot, garlic, and basil until veggies are soft.

In bowl, combine turkey, egg, breadcrumbs, cooked vegetables, Parmesan, salt, pepper, and hot sauce. Mix well. Press turkey mixture into 8x4 inch (20x10cm) loaf pan lined with foil. Brush with ketchup.

Bake for 1 hour 20 minutes. Let stand for 10 minutes before slicing.

(Freeze leftovers in individual slices for turkey burgers.)
