Chicken and Wild Rice cassrole
Creamy and delicious
ingredients
- 4 whole chicken breasts
- 1 pkg.long grain and wild rice mix
- 1 medium size onion chopped
- 1 cup celery chopped
- 1/2 green pepper,chopped
- 1/2 lb.mushrooms sliced
- 1/4 cup butter
- 1 can water chestnuts drained and sliced
- 3/4 cup mayo
- 1 can cream of chicken soup
- 1 can cream of mushroom
directions
Cook chicken and cut off the bone in large pieces. Prepare rice as directed.Sautee onion,celery,green pepper and mushrooms in butter. Combine chicken, rice, vegetables, chestnuts, mayo and soups.Place in a large casserole dish or large baking dish. Bake uncovered 30 minutes at 350 degrees or until bubbly. Can be made the day ahead and refridgerated. Allow extra cooking time.
