Bruschetta
The noun “bruschetta” is derived from the latin verb “bruscare,” meaning “to roast over coals”. The meaning of the word has changed over time and it now refers to the topping instead of the dish.
ingredients
- 4 large tomatoes, coarsely chopped
- 1 sweet onion, chopped
- 3 tbsp olive oil
- 2 tbsp chopped fresh oregano
- 2 tsp chopped fresh basil
- 1 tbsp chopped fresh parsley
- 1 loaf Italian bread, cut into 1 inch slices
- 1/4 cup parmesan cheese

1. Preheat oven to 400° F (200° C).

2. In a medium bowl, combine tomatoes, onion, olive oil, oregano, basil and parsley. Place bread on a baking sheet, and top with tomato mixture. Sprinkle with parmesan.

3. Bake in preheated oven for 8 to 10 minutes, or until bottom of bread is browned. Allow to cool 5 minutes before serving.
