ingredients

  • Mix the following dry ingredients in a large mixing bowl:
  • 1/2 cup quick oats
  • 1 c. flour and
  • 1 c. whole wheat flour
  • 1 c. wheat bran
  • 1/2 c. oat bran
  • 1/2 tsp salt
  • 2 1/2 tsp baking powder
  • 2 1/2 tsp baking soda
  • Mix the following wet ingredients in a medium sized mixing bowl
  • 1 egg, beaten
  • 1/2 c. applesauce
  • 1/2 c. dark molasses
  • 3/4 c. buttermilk
  • 20 oz. unsweetened, crushed pineapple, undrained
  • 3/8 c. honey
  • 1/2 c. raisins or craisins
  • 1/2 c. nuts, chopped (optional)

    Blend wet ingredients into dry ingredients just until mixed/moist. Fill greased muffin tins 3/4 cup full. Bake @ 400 degrees 10-12min.

    Options: Add 1/2 tsp each of cloves, nutmeg & cinnamon
