Grandpa Naasson's Healthy Bran Muffins
ingredients
- Mix the following dry ingredients in a large mixing bowl:
- 1/2 cup quick oats
- 1 c. flour and
- 1 c. whole wheat flour
- 1 c. wheat bran
- 1/2 c. oat bran
- 1/2 tsp salt
- 2 1/2 tsp baking powder
- 2 1/2 tsp baking soda
- Mix the following wet ingredients in a medium sized mixing bowl
- 1 egg, beaten
- 1/2 c. applesauce
- 1/2 c. dark molasses
- 3/4 c. buttermilk
- 20 oz. unsweetened, crushed pineapple, undrained
- 3/8 c. honey
- 1/2 c. raisins or craisins
- 1/2 c. nuts, chopped (optional)

Blend wet ingredients into dry ingredients just until mixed/moist. Fill greased muffin tins 3/4 cup full. Bake @ 400 degrees 10-12min.

Options: Add 1/2 tsp each of cloves, nutmeg & cinnamon
