Mediterranean Pizza

ingredients

  • 1 Pizza Crust or 4 pitas
  • 1 jar marinated artichoke hearts, drained saving marinade
  • 1 small can ripe olives, drained
  • 2 oz. thinly sliced ham, in strips (or 1 c. small cooked chicken bites)
  • 2 roma tomatoes, thinly sliced 1 t. oregano
  • 1 t. basil
  • 1/2 t. thyme
  • 2 c. shredded low fat cheddar cheese
  • 1/3 c. feta cheese

    Spread pizza crust on lightly oiled pan or use pita bread opened.

    Using fingers or pastry brush, lightly cover crust with artichoke marinade.

    Sprinkle oregano, basil and thyme over crust.

    Cover with 1 cup of cheddar. Add sliced tomatoes, artichoke hearts (cut in small pieces and drained), meat, ripe olives, feta, and top with 1 cup cheddar. Bake at 400 degrees for 15-20 minutes until browned. Cut into 8 pieces. (4-5 WW points per serving!) Delish!
