LISA'S FLOUNDER PUTTANESCA OVER SAUTEED SPINACH
I SERVE PUTTANESCA SAUCE OVER FLOUNDER (OR ANY THIN WHITE FISH) TO JAZZ UP THE FISH. USE THE VERY BEST CANNED CHOPPED TOMATOES. THE SWEETER AND LESS ACIDIC THE BETTER.
ingredients
- 2-3 FLOUNDER FILLETS
- 2 CUPS CHOPPED AND SEEDED PLUM TOMATOES
- HANDFUL OF PITTED KALAMATA OLIVES
- 1 TBSP SMALL CAPERS, DRAINED
- 1/2 BAG FRESH BABY SPINACH
- 6 GARLIC CLOVES, SLICED
- OLIVE OIL, AS NEEDED
- SEA SALT & FRESH GROUND PEPPER

PREHEAT OVEN TO 400°

IN A SMALL SAUCEPAN OVER MEDIUM HEAT SAUTE SOME OF THE GARLIC (DO NOT LET IT GET CRISPY) IN A BIT OF OIL. ADD THE TOMATOES, CAPERS, A BIT OF THE CAPER LIQUID, OLIVES, SALT AND PEPPER TO TASTE. LET THE SAUCE BOIL 3 MINUTES WHILE STIRRING. TURN HEAT DOWN TO A VERY LOW FLAME AS FISH IS COOKING IN OVEN.

BRUSH A BIT OF OLIVE OIL ON THE BOTTOM OF THE BAKING DISH; PUT TWO TABLESPOONS OF SAUCE ON BOTTOM OF PAN UNDER FISH, AND SOME SAUCE ON THE FISH.

BAKE ABOUT 10 MINUTES, OR UNTIL COOKED THROUGH (DO NOT OVERCOOK )

PREPARE THE SPINACH:

HEAT OLIVE OIL IN SAUTE PAN OVER MEDIUM-HIGH HEAT.

SAUTE GARLIC UNTIL SOFT AND SLIGHTLY GOLDEN, REMOVE THE GARLIC

ADD THE SPINACH TO THE PAN AND UNTIL JUST WILTED, ABOUT 3-5 MINUTES. ADD THE GARLIC BACK TO THE PAN AND TOSS. SEASON GENEROUSLY WITH SALT AND PEPPER.

TO SERVE: SPOON THE SPINACH IN CENTER OF PLATE AND TOP WITH FISH, SPOON SAUCE OVER FISH.
