Couscous and Feta Cakes
ingredients
- 2 1/2 c. water
- 1 c. uncooked couscous
- 4 t. olive oil
- 1 c. onion
- 1 1/2 c. finely diced bell pepper
- 2 cloves garlic
- 4 oz. feta
- 1/2 c. flour
- 1/2 c. egg substitute or 1 egg
- 2 T. fresh parsley
directions
Cook couscous. Sauté onion, peppers and garlic. Combine with couscous, feta and remaining ingredients. Make into 3-4" cakes. Fry 3 min each side.

Quick side dish. It's good if you add spicy red pepper flakes, too!
