Chicken Cutlets with Grilled Plums & Goat Cheese
To make this perfect one stop meal, grill some asparagus and fresh corn just before you cook the chicken, then serve it all together.
ingredients
- 8 thin chicken breast cutlets
- 1 tablespoon lemon olive oil
- 1 teaspoon fresh thyme leaves
- 2 large plums, halved lengthwise, pit removed
- 1 3-oz. log fresh goat cheese at room temperature, cut into 4 slices

1. Preheat grill to medium. Toss chicken with olive oil and thyme; add salt and pepper to taste. Slice tiny bit of curved side of each plum half, and set plum halves upright.

2. Place chicken on grill; place plums on grill cut-side down. Cook about 2 minutes, then turn both chicken and plums, and cook 2 minutes more. (Ripe plums may need to come off sooner.) Remove chicken and plums from grill.

3. Place two cutlets on each of four plates; place 1 plum half atop cutlets, and lay 1 slice goat cheese on top.
