Twice Baked Potatoes

ingredients

  • 4 Russet potatoes
  • 4 oz sharp cheddar cheese shredded
  • 1/2 C sour cream
  • 1/2 C buttermilk
  • 2 tbsp butter
  • scallions chopped fine
  • salt
  • pepper

directions

Bake potatoes at 400 degrees for 1 hour or until done in center. Cool for 10 minutes. Slice in half lengthwise and scoop out flesh. return skins to oven for 10-15 minutes. Meanwhile mix flesh of potatoes with above ingredients. Mash with fork or potato masher. Remove shells from oven and fill with mixtured. Return to oven for 15-20 minutes or until brown.

Notes: Can substitute hot pepper monterey jack cheese for a spicy potato!
