Banana Bread
Banana bread is a sweet, cakelike bread which contains mashed bananas. It is a quick bread which typically uses baking soda as the leavening agent instead of yeast. The bread is baked from thick batter which does not require kneading.
ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup applesauce
- 3/4 cup brown sugar
- 2 eggs, beaten
- 1/2 cup of pecans
- 2 1/3 cups mashed overripe bananas

1. Preheat oven to 350° F (175° C). Lightly grease a 9 in x 5 in loaf pan.

2. In a large bowl, combine flour, baking soda and salt.

3. In a separate bowl, cream together applesauce and brown sugar. Stir in eggs, pecans, and mashed bananas until well blended.

4. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.

5. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
