Sour Cream Chicken Enchiladas
These may not be healthy, but they are delicious!
ingredients
- 2-12.5 oz cans of chicken breast
- 8 oz tub sour cream
- 1 can old El Paso enchilada sauce (medium)
- 8 oz can green chilies
- 10-8 inch tortillas
- 2 1/2 c. heavy whipping cream
- 2 c. Colby Jack cheese
directions

Preheat oven to 350 degrees
- 2
Mix the first 4 ingredients together.

Pour enough heavy whipping cream in 9x13 to prevent sticking.

Fill tortillas, and place in 9x13 seam down.

Pour remaining heavy whipping cream over enchiladas.

Bake for 45 minutes.

Top with Colby Jack cheese and bake for 10 more minutes to melt cheese.

I like to add frozen corn and cactus strips to these sometimes to feel like I'm off setting the fat, they're great this way too.
