Fried Chicken with Gubbins Mustard Sauce
ingredients
Fried Chicken- 3 tablespoons oil
- 6 chicken pieces
- salt
- ground pepper
- 1 teaspoon rosemary
- 2 tablespoons parsley, finely chopped
- 2 ounce butter
- 3 tablespoons freshly prepared English mustard
- 2 tablespoons tarragon vinegar
- 2 cups sour cream

Melt the oil in a large frying pan. Sprinkle the chicken pieces with salt and pepper and place them in the pan. Add the rosemary and cook over medium heat for 25 minutes, turning the chicken frequently.

While the chicken is cooking, melt the butter in a double boiler and add the mustard. Stir in the vinegar very slowly and add the sour cream gradually. When the chicken is cooked, transfer it to a warm serving dish, pour the sauce over it and sprinkle the parsley on top.

Serve with lots of rice and chutney on the side.
