Ultimate Cheesecake
ingredients
- Crust:
- 2 cups fine ground graham crackers
- 1/2 tsp ground cinnamon
- 1 stick unsalted butter, melted
- Filling:
- 1 lb cream cheese, softened
- 3 eggs
- 1 cup sugar
- 1 lemon, zested
- 1 pint sour cream
- Dash vanilla extract

Preheat oven to 325°F

In a bowl, combine crust ingredients with a fork until moistened. Lightly coat a spring form pan with nonstick spray. Press crumbs into pan, even out with the bottom of a measuring cup along the bottom and 1" up the sides. Refrigerate for 5 minutes.

In a separate bowl, beat the cream cheese for 1 minute. Add in the eggs one at a time, then gradually add the sugar and beat 1-2 minutes. Add in sour cream, lemon zest and vanilla; beat until smooth. Pour into the spring form pan and smooth out the top.

Put pan on a large sheet of aluminum foil and fold up the sides. Place into a roasting pan and pour in boiling water halfway up the sides of the pan. Bake for 45 minutes. Cool on the counter for 30 minutes then refrigerate for 4 hours.
