ingredients

  • 2 ounces butter
  • 2 carrots, chopped
  • 2 medium onions, chopped
  • 1 large garlic clove, chopped
  • 6 medium tomatoes, skinned and halved
  • 4 cups chicken stock
  • salt
  • pepper
  • 1/2 teaspoon nutmeg
  • sugar
  • juice of half an orange
  • 1 cup heavy cream

directions

Melt the butter in a large saucepan over low heat. Add the carrots, onion, and garlic and cook for approximately 10 minutes. Be careful not to let the vegetables burn. Add the tomatoes and the stock and continue to cook until the carrots are tender. Puree the soup in a blender or food processor and season to taste with salt and pepper. Add the nutmeg and a pinch of sugar and pour in the orange juice and cream.
