Pear Nut Bread

Makes 2 large loaves or 4 small loaves

ingredients

  • 3 eggs
  • 1 c. oil
  • 1 1/2 c. sugar
  • 1 tsp. vanilla
  • 1/2 tsp. grated lemon peel
  • 2 c. (4-5) fresh pears, grated
  • 3 c. flour
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 1/2 tsp. cinnamon
  • 2/3 c. chopped walnuts or pecans

    Coursely grate pears to make 2 cups. Beat eggs until light and fluffy. Add oil, sugar, lemon peel, vanilla and grated pears. Mix thoroughly.

    Sift together dry ingredients. Add pear mixture. Mix well. Stir in nuts.

    Pour batter into greased loaf pans. Bake at 325 approximately 50 minutes. Check with toothpick. Cool on wire rack.
