Chicken Marsala
ingredients
- 1 lb. boneless chicken breast
- 1/4 C. flour
- 1/2 tsp. salt
- 1/2 tsp. oregano
- 4 Tb. olive oil
- 4 Tb. butter
- 1 clove garlic, minced
- 1 C. fresh mushrooms, sliced
- 1/4 C. scallions, sliced
- 2 Tb. fresh parsley, chopped
- 1/2 C. Marsala wine
directions
Combine flour, salt, pepper and oregano and blend well. Heat the oil and butter in a skillet until bubbling lightly. Dredge the chicken in the flour and shake off excess. Cook the chicken on medium heat for about 2 minutes on each side until nicely browned. Add mushrooms, garlic and scallions, around the chicken as it cooks on the second side. Add wine cover pan and simmer for about 10 minutes.
Serve with fresh pasta.
