Southwestern Strata with Sausage
ingredients
- 3/4 lb pork, mild italian, or chorizo sausage
- 1/2 lb french bread cut in 3/4 in slices (can be slightly stale)
- 1 garlic clove, cut in half
- 1 c grated pepper-jack cheese, (can use colby-jack)
- 6 eggs, slightly beaten
- 2 c milk
- 1/2 t powdered mustard
- 3/4 t salt
- pepper to taste
- salsa (optional)

Saute sausage over medium high hear until cooked through and lightly browned (5-7 minutes). Drain on paper towels.

Spray a 12x10 inch baking dish. Rub bread with cut garlic cloves and spread bread over bottom of the baking dish. Sprinkle with half of the cheese. Cover and refigerate until ready to bake.

Preheat oven to 350 degrees. Beat eggs, milk, mustard, and salt and pepper. Pour over bread. Bake for 45 minutes to one hour until slightly browned and puffed.

Serve with salsa if desired.

Note: I make this with half chorizo and pepper jack, and half breakfast sausage and colby jack.
