Salmone al Caroccio

A Base recipe

1 (and half hours)


  • 6 salmon fillets
  • 6 large shrimp or mussels or both
  • 3 diced fresh tomatoes
  • 2 cloves sliced garlic
  • 12 leafs of fresh basil
  • 3 oz white wine
  • 1/2 ox extra virgin olive oil
  • 6 slices lemon
  • salt and peper to taste


marinate the salmon in oil and garlic for at least 1 hour. Can add capers to marinade. Season with salt and pepper and place in center of a parchment paper. Mix diced tomatoe with garlic and basil. spoon mixture onto salmon and place shrimps on top (one per salmon with slice of lemon. Add splash of wine and any other seasoning and butter if you wish,. fold paper into an envelope and put on s sheet pan. Bake at 350 degrees for 20 minutes. Place on plate , cut the top of the paper and serve
