Quick Kale with Onions and Bacon
ingredients
- 2 tsp olive oil
- 1 medium onion, chopped
- 3/4 lb kale
- 1/2 cup fat-free chicken broth
- 1/4 tsp salt
- 1/4 tsp crushed red pepper
- 1/8 tsp black pepper
- 2 slices Jennie O Extra Lean turkey bacon
- 1 lemon, sliced into four wedges
- 3 cloves garlic, minced
- 1/4 cup grated parmesan cheese
directions
Heat oil in a Dutch oven over medium-high heat. Add onion and garlic to pan; sauté 6 minutes or until onion is tender and begins to brown. Add half of kale, 1/4 cup broth, salt, and peppers to pan. Cover, reduce heat, and cook 4 minutes. Add remaining kale and remaining 1/4 cup broth to pan. Cover and cook 16 minutes or until tender, stirring occasionally. Sprinkle with bacon and parmesan cheese. Serve with lemon wedges
