Shrimp and Squash Penne
ingredients
- 2 tbsp olive oil
- 4 C yellow squash -- thinly sliced (about 4 small)
- 3 C zucchini -- thinly sliced (about 2)
- 1 lbs medium shrimp -- peeled and deveined
- 1/4 C lemon juice
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3 cloves garlic -- minced
- 4 C penne -- cooked (about 1/2 pound)
- 1/2 C chives or green onions -- thinly sliced
- 1/4 C grated parmesan cheese
directions
Heat oil in a large skillet over medium-hig heat. Add squash and zucchini and saute 10 minutes. Add shrimp and saute 3 minutes. Add juice and next 5 ingredients (juice through garlic), cook 2 minutes or until shrimp are done. Combine shrimp mixture, pasta, chives and cheese in a large bowl and toss gently.
