Roasted Pears with Blue Cheese and Walnuts
ingredients
- 4 pears -- cut in half (not peeled)
- Extra virgin olive oil
- 1/4 bundle fresh thyme
- salt and pepper
- 1/4 C crumbled blue cheese
- 1/4 C walnut pieces
directions
Place the pears (cut side up) on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Stip the leaves from the thyme branches and put on pears. Bake in a pre-heated 375 oven for 20 minutes. Remove tray from oven and spoon crumbled cheese onto pear centers and place in the oven for another 10 minutes. Meanwhile, pan roast the nuts for about five minutes and when the pears are finished, sprinkle the nuts on top of the pears when you place on the serving platter. *** Emily, you can use any good flavorful melting cheese if you do not like blue cheese. Also, you can substitute pecans for the walnuts and sometimes I add dried cranberries the last few minutes. It adds color and a little sweetness.
