Crisp Toffee Bars
ingredients
- 1/2 lbs sweet butter
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1 C brown sugar -- firmly packed
- 2 C all purpose flour -- sifted
- 4 oz walnuts -- cut into medium size pieces
- 6 oz semisweet chocolate chips -- (toffee bits)
directions
Preheat oven to 350 degrees and place on center rack. In an electric mixer cream butter. Add salt, vanilla and sugar and beat well. On low speed gradually add flour - scraping bowl with rubber spatula and beating until mixture holds together. Add nuts and chocolate morsels and stir until evenly distributed. Dough will be stiff. With fingers, place small mounds of dough in unbuttered 10 1/2 x 15 1/2 x 1 inch jelly roll pan. With floured fingertips, press dough firmly to make even layer (will be thin). Bake for 25 minutes - reversing the pan front to back once to insure even baking. Cake will be golden brown. Let cool in pan for a minute of so. Then with a small sharp knife, cut into bars. Let stand in pan to cool. Wrap individually in cellophane or wax paper or store in airtight container.
