Broccoli Rice Quiche
ingredients
- 1 1/2 cups hot cooked white rice
- 3 oz grated cheddar cheese
- 3 eggs
- salt and pepper
- 3 oz skim milk
- 3/4 cup mushrooms, sliced
- 1 1/2 cups chopped broccoli

Preheat oven to 375 degrees.

Mix the rice with half the cheese and one egg. Season to taste. Press firmly into a 9 inch quiche or pie pan. Beat remaining eggs, slightly. Stir in milk, mushrooms and broccoli. Spoon over rice mixture and bake 20 minutes.

Sprinkle remaining cheese over mixture and bake another 10 minutes.
