Summer Potato Salad
ingredients
- Yukon Gold potatoes
- Celery (minced)
- Onions (chopped fine)
- Smoked uncured bacon (fried crispy and chopped)
- Poppy seeds
- Salt and pepper
- Mayonnaise
- Plain yogurt

Boil potatoes for approximately 6 minutes - until cooked through. Quarter or chop into smaller bite size pieces.

Combine all ingredients (fewer onions than celery) except mayonnaise and plain yogurt.

Combine mayonnaise and plain yogurt in separate bowl (should taste creamy - not too mayonnaisey) and then toss with potatoes.
