Curried Chili Cashews

ingredients

  • 1 large egg white
  • 1 teaspoon frozen orange juice concentrate
  • 4 cups raw cashews (or mix of raw nuts and seeds)
  • 1/4 cup sugar
  • 1 teaspoon kosher salt
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon curry powder

    Preheat oven to 225 degrees. Line a baking sheet with parchment paper.

    Whip the egg white in a stainless steel bowl until it forms stiff peaks. Add orange juice concentrate and whip again. Add the cashews and toss until well coated. Add sugar, salt and spices and toss again.

    Spread nuts in a single layer on prepared baking sheet. bake, stirring every ten minutes, until browned (40 to 50 minutes)

    Remove from oven and immediately loosen with spatula. Set aside to cool at least one hour (preferably overnight.)
