Arroz Doce
ingredients
- 2 cups Calrose rice
- 6 cups milk 1%
- 1/2 cup butter
- 2 large lemon rind
- 1 teaspoon salt
- 2 cups sugar
- 4 cups water
- 1 piece cinnamon stick
- 5 large egg yolks
directions
Place all ingredients (except egg yolks and lemon rind) in a non-stick pot. Mix to incorporate ingredients. Cover and cook over low/medium until it reaches a boil (usually about 45 minutes). Be careful that the foamy milk does not boil over. Reduce heat to low and simmer for 10 to 15 minutes, stirring occasionally. Turn off heat, add lemon rind, stir a bit, replace lid and let sit covered for 45 minutes. Remove lid, add egg yolks, stir really well. Turn heat on to medium until it comes to a boil. Stir a few minutes at medium heat until desired consistency is reached. Pudding will thicken as it cools.

Calrose is a short grain, extra-fancy rice that can usually be found in the Asian section at your local grocery store.
