warm basil cream
to use with grilled salmon
ingredients
- 1 tablespon olive oil
- 1/4 sup chopped shallots or scallions
- 2 tablespoons chopped garlic 1/2 cup dry white wine
- 2 cups rick shellfish or chicken stock
- 1 teaspoon fennel seed
- 1 cup heavy cream
- 4 cups lightly packed basil leaves
- 1 tablespoon each chopped fresh parsley and mint
- kosher salt and pepper
- fresh lemon juice
- 1/2 up peeled seeded and diced plum tomatoes
