Herby Potato Rosti
ingredients
- 3 large potatoes, peeled
- 3-4 large sage leaves
- a sprig of thyme, leaves stripped
- 1/4 cup olive oil
- salt and freshly ground black pepper

Grate the potatoes on the coarse side of a box grater and dry well on paper towels.

Finely chop the sage and thyme leaves.

Put the grated potato in a bowl. Add the herbs, and mix well.

Using your hands, shape a heaped tablespoon of the mixture into a ball.

Heat half the oil in a large skillet until hot. Add the shaped potato cake to the skillet and flatten with a spatula. Saute for 5 minutes until golden.

Turn the rosti over and lower the heat. Continue to cook for 5-10 minutes until golden and cooked through. Transfer to oven to keep them warm.

Transfer to serving plate, sprinkle with salt and pepper, and serve immidiately.
