Trail Mix Cookies

Better than granola bars...perfect mid-morning snack.

ingredients

  • 1 cup all natural peanut butter, with liquid
  • 1 egg
  • 1 cup organic brown sugar
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1 cup mix of old fashioned oats, trail mix, etc (chopped)

directions

    Mix peanut butter, egg, brown sugar and vanilla. Add your choice of 1 cup trail mix- I generally use 1/2 cup old fashioned oat with chopped almonds, craisins, raisins, walnuts and dark chocolate.

    Roll into tablespoon sized balls. Flatten.

    Bake at 350 degrees for 10-12 minutes.
