Trail Mix Cookies
Better than granola bars...perfect mid-morning snack.
ingredients
- 1 cup all natural peanut butter, with liquid
- 1 egg
- 1 cup organic brown sugar
- 1 tsp vanilla
- 1 tsp baking soda
- 1 cup mix of old fashioned oats, trail mix, etc (chopped)

Mix peanut butter, egg, brown sugar and vanilla. Add your choice of 1 cup trail mix- I generally use 1/2 cup old fashioned oat with chopped almonds, craisins, raisins, walnuts and dark chocolate.

Roll into tablespoon sized balls. Flatten.

Bake at 350 degrees for 10-12 minutes.
