Jalapeno Cornbread
ingredients
- 1 cup Flour
- 1 cup Cornmeal
- 1 cup Milk
- 2 1/2 Tsp Baking Powder
- 2 Eggs
- 1/4 cup Oil
- Mix all together then stir in
- 1 lb Sausage (browned)
- 1 can Whole Kernel Corn (drain most of the juice)
- 1 med Onion (chopped)
- 2-4 Jalapenos
- 2 cups Sharp Cheddar Cheese (shredded)

You can also use 1 cup sharp and 1 cup Jalapeno Jack

Stir all together. If too dry, add 1/8 to 1/4 cup Milk to thin out

Pour enough oil to cover the bottom of your cast iron skillet and heat it at 350. When the oil is hot, pour in mix. This will crisp the crust.

Bake for 35-45 minutes until done in center.

Any cornbread recipe will work for the base as long as you do not use sugar, even Jiffy!
