Kat's Pavlova
ingredients
- 3 large fresh egg whites
- 6 oz of caster sugar
- TOPPING
- 10 fl oz cream, whipped
- 12 oz soft fruits (raspberries, strawberries, blackberries etc)
- A little icing sugar

Pre-heat the oven to 150 degrees C

Whisk the egg whites

Half way through whipping the eggs and sugar, add a tsp of lemonjuice and a tsp of cornflour

When you can turn the bowl upside down without them sliding out, the eggs are down, the eggs are ready.

Spoon the merangue onto a lightly oiled baking sheet - spread out like a dish with higher edges.

Leave the merangue in the oven for an hour. Then leave the Pavlova base in the oven, with the over turned off, until the merangue has completely cooled. (This can be done the day before)

When cool, top with the whipped cream, and fruit..
