Twice-Baked Potato Casserole
ingredients
- 4-6 cups mashed potatoes
- 1 pkg dry ranch dressing mix
- 1 cup shredded cheddar cheese (divided)
- 1/2 cup chopped bacon
- 2 cups sour cream (16 oz.)
- 1/2 bunch green onions (chopped)
- 2 tbsp butter
- salt and pepper to taste

Preheat oven to 350°F.

In a large mixing bowl, combine all of the ingredients except 1/2 of the shredded cheddar. Mix well and pour mixture into a 13 X 9 baking pan. Top the potato mixture with the remaining 1/2 cup of shredded cheddar. Cover with foil and bake for about 20 min. at 350°F. Uncover and bake for an additional 5-10 minutes or until cheese has reached desired brownness.
