Cheese Ring
Not exactly low calorie, but it sure tastes great!
ingredients
- 1 lb of sharp cheddar cheese, shredded
- 1 cup of mayonnaise
- 1/2 cup of chopped green onion
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp red pepper
- 1 cup pecans, toasted
- 1 (12 oz.) jar of strawberry preserves
directions

Shred cheese, combine with the next six ingredients in the food processor.

Shape the mixture into a ring, cover and chill 8 hours.

(I use a mold shaped like a doughnut, but you can do it by hand.)

Spoon preserves into the “well” in the middle.

Serve immediately with crackers.

Cheese mixture (without preserves) may be prepared up to 2 days ahead, keep in refrigerator till ready to use.
