ZUCCHINI BREAD

Makes 2 loaves

ingredients

  • 4 eggs
  • 2 cups sugar
  • 1 cup oil
  • 3 1/2 cup unsifted flour
  • 1 1/2 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1 1/4 teaspoon salt
  • 2 cups grated unpeeled zucchini
  • thawed orange juice concentrate
  • 1 1/2 teaspoon vanilla
  • 1 cup chopped nuts
  • 1 cup cooked and cooled raisins OR
  • 1 cup chopped dates

    Mix together eggs, sugar and oil.

    Combine flour, baking soda, baking powder, cinnamon and salt.

    Add dry ingredients alternately with 2 cup grated unpeeled zucchini and 1/3 cup undiluted thawed orange juice concentrate. Mix well.

    Stir in 1/2 teaspoon vanilla, 1 cup chopped nuts, 1 cup cooked and cooled raisins (drain off water) or 1 cup chopped dates. Divide batter evenly between 2 greased and floured loaf pans.

    Bake at 350° for one hour or until done.
