Basil and Chevre seasoned Quinoa with roasted Parsnips and Carrots
The basil plays well with the parsnip, and the carrot gives a sweet element. Goat cheese adds a light fresh vibe to the Quinoa, the celery gives texture.
ingredients
- Quinoa
- Celery
- Parsnip
- Carrot
- Garlic
- Basil
- Goat Cheese
- Brown Sugar or Maple Syrup

Boil the quinoa in seasoned water until tender, using more then enough water stops the quinoa from boiling into porridge, and clumping together.

Dice parsnips, carrots, and celery.

Use celery fresh, roasted parsnips or sauted until soft. Oven the carrots with a bit of brown sugar.

Combine garlic, goat cheese, and basil(s/p) in a food processor until smooth.

Drain quinoa, and rinse with cool water, let drain. Then mix all together, season to taste!
