Ina's Outrageous Brownies

ingredients

  • 1 lb. unsalted butter
  • 1 lb. plus 12 oz. semisweet chocolate chips
  • 6 oz. bittersweet chocolate
  • 6 extra large eggs
  • 2 Tablespoons vanilla extract
  • 3 Tablespoons coffee granules
  • 2 1/4 cups sugar
  • 1 1/4 cups flour
  • 1 Tablespoon baking powder
  • 1 teaspoon salt
  • 3 cups chopped walnuts

    Preheat oven to 350oF

    Butter and flour a 12 x 18 x 1 baking sheet

    Melt butter, 1 lb. semisweet chocolate, and bittersweet chocolate in a medium bowl over simmering water. Allow to cool slightly.

    In a large bowl, stir the eggs, coffee, vanilla, and sugar. Stir in the warm chocolate and allow to cool to room temperature.

    In a medium bowl, sift together 1 cup flour, baking powder, and salt. Add to cooled chocolate mixture. Toss walnuts and 12 oz. chocolate chips with 1/4 cup flour, and add to chocolate butter. Pour into baking sheet.

    Bake 20 minutes, and then rap the baking sheet against the oven shelf to force the air to escape. Bake 15 minutes more. Do not overbake. Allow to cool and refrigerate. Cut into 20 squares.

    Recipe can be baked a week in advance, wrapped in plastic and refrigerated.
