Hot Cheesy Spinach Dip
Perfect for a fall gathering.
ingredients
- 2 tbsp. butter
- 1/4 c. chopped onion
- 1 tsp. minced garlic
- 1 tbsp. flour
- 1 3/4 c. half-and-half
- 1 can artichokes
- 2 pkg. frozen spinach
- 1 cup shredded cheese (cheddar)
- 1 pkg dry vegetable soup mix
- 1/4 c. Parmesan cheese
- 4 oz. cream cheese (or 2 oz)

1.) Preheat oven to 425°.

2.) Melt butter in a pan; add onion and garlic and cook until onion is crisp-tender (2-3 minutes).

3.) Stir in flour, cook an additional minute.

4.) Add half-and-half and cook, stirring constantly, until mixture boils and thickens (approx. 2 minutes).

5.) Remove saucepan from heat. Stir in chopped spinach, artichokes, cheddar cheese, cream cheese, and veggie soup mix.

6.) Spoon into 1 qt. casserole dish and sprinkle with Parmesan.

7.) Bake dip until bubbly and cheese is melted. Serve warm.
notes
Best served with toasted french bread or pita chips.
